Celebrate Spring with This Easy 3-Course Seasonal Menu

Spring is in full bloom, and there’s no better way to celebrate the season than with fresh, vibrant, and easy-to-make dishes. Whether you’re hosting friends, family, or colleagues, this 3-course menu is packed with flavor, color, and seasonal goodness, all without spending hours in the kitchen.

Starter: Asparagus & Pea Salad 

This bright and crunchy salad is perfect to kick off your spring meal.

Ingredients:

  • 200g asparagus, trimmed
  • 150g peas (fresh or frozen)
  • 50g baby spinach
  • 2 tbsp toasted almonds
  • 2 tsp lemon juice
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • Optional: 20g parmesan

Instructions:

  1. Blanch asparagus and peas in boiling water for 2–3 minutes, then cool in ice water to keep them vibrant.
  2. Toss the vegetables with baby spinach, toasted almonds, lemon juice, olive oil, salt, and pepper.
  3. Top with parmesan if desired. Serve immediately.

Ingredients:

  • 1 tbsp olive oil

  • 100g radishes, thinly sliced
  • 50g baby spinach
  • 150g cooked rice or noodles
  • 1–2 tbsp soy sauce
  • 1 tsp sesame oil

Instructions:

  1. Heat olive oil in a pan over medium heat and sauté spring onions for 1–2 minutes.
  2. Add peas, radishes, and spinach, cooking until just tender.
  3. Toss in cooked rice or noodles, add soy sauce and sesame oil, and stir well. Serve immediately.
  4. This stir-fry is perfect for a light yet satisfying main course that highlights the season’s freshest vegetables.


Dessert: Strawberry & Rhubarb Crumble 

A sweet and comforting end to your spring meal.

Ingredients:

  • 200g strawberries, sliced
  • 150g rhubarb, chopped
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 50g oats
  • 50g flour
  • 50g butter, cold and diced
  • 30g brown sugar

 

Instructions:

  1. Preheat the oven to 180°C.
  2. Mix strawberries, rhubarb, sugar, and lemon juice in a baking dish.
  3. Combine oats, flour, butter, and brown sugar until crumbly, then sprinkle over the fruit.
  4. Bake for 25–30 minutes until golden and bubbling. Serve warm.
